Quick & Healthy Homemade Peanut Butter & Jelly Recipe – Yum!

A good old-fashion peanut butter and jelly sandwich is a childhood favorite and a comfort food for many. While we all crave this feel-good anytime snack, high sugar content and unhealthy preservatives may make you want to steer clear.

Good news! You don’t have to skip the PB&Js any longer. You can whip up your own healthy versions of peanut butter and jelly, so you can enjoy this treat anytime you’d like.
 

Here are easy DIY recipes for tasty almond butter and a sweet double berry jam:

 

Better Almond Butter

Save some cha-ching by making your own healthy, nutty spread. Toasting these almonds creates a delicious flavor, eliminating the need to use any salt or sugar.
 
Ingredients:

  • 2 cups toasted whole almonds

 
Yield:

  • 1.5 cups

 
Toast almonds in oven for 5 minutes at 350 degrees. Throw warm almonds into a food processor. Process on high speed – just push the “on” button and walk away. Come back in about 10 minutes to smooth, delicious almond butter. Scrap down the bowl. Process for one additional minute.
 
Use this yummy DIY almond butter in smoothies and on toast, waffles, fruit, brownies, and everything in between.
 
Put your nut butter in a glass container and store it in the refrigerator. Store for up to two weeks, if you don’t eat it all sooner!
 

 

Double Berry Jam

Spread this scrumptious jam on your morning toast, swirl it in your Greek yogurt, or spoon it over your ice cream. Any way you use it, this fiber-filled jam is sure to keep you coming back for more!
 
Ingredients:

  • 16 oz. frozen cherries, defrosted
  • 12 oz. frozen raspberries, defrosted
  • 3 tbsp. chia seeds
  • 1 tbsp. coconut nectar or liquid sweetener of choice, optional

 
Yield:

  • 3.5 cups

 
Pulse fruit in a food processor approximately 20 times. Add chia seeds and sweetener, if using. Pulse a few times to incorporate.
 
Place the mixture in clean jars and refrigerate. The jam will thicken as it chills. Store in the refrigerator for up to two weeks.
 
The next time you are in the mood for a comforting PB&J, whip up your own almond butter and jam and enjoy this healthy version to your heart’s content.
