Making kombucha at home is a simple process that can be done in just a few minutes and is much more affordable than store-bought kombucha. One gallon (128 fl oz) of homebrewed kombucha costs less than $3, where a 16 fl oz bottle of store-bought kombucha can range anywhere from $3 – $7.
 
Brewing your own kombucha is definitely the way to go and it is an incredibly fulfilling process as you are drinking a healthy product of your own creation. Kombucha is all the rage these days for its wide range of health benefits, including immunity boost and gut health.

What is a SCOBY and What Are Its Health Benefits?

The Symbiotic Culture Of Bacteria and Yeast is a bit nasty looking, and definitely interesting to the touch, but it is simply a home for live bacteria and yeast to live and grow. Think of it as a nest to host baby bacteria and yeast.
 
A SCOBY is often referred as “the mother” or “the mushroom” by kombucha brewers. It’s all the same thing regardless of what you call it.

You can also grow a SCOBY from nothing! You’ve probably bought a bottle of kombucha with stringy floaty things it is, right? Well that’s a baby SCOBY! If you place that in a jar, leave it in a dark place, and feed it with sugar, then you’ll eventually have a full grown SCOBY ready to make some kombucha magic happen.
 
SCOBYs are alive and need nutrients just like the rest of us to thrive and make our kombucha as fizzy and tasty as possible. Which leads us to the next main point . . .
 

What Do You Feed a SCOBY?

A SCOBY only eats sugar. Traditionally (for literally thousands of years), kombucha was brewed with 100% cane sugar. Now in modern times, we have many different types of natural sugar available to us – but the SCOBY really does thrive with organic, non-GMO, natural cane sugar.
 
While you may be thinking, “I don’t want to be drinking sugar! Why is it in my kombucha?” Simmer down . . . the sugar isn’t for you, it’s for your SCOBY.
 
A large percentage of the sugar will be consumed and converted by the SCOBY and it won’t even make it to your glass or mouth. If you’ve ever tasted kombucha, you can verify that it actually tastes more like apple cider vinegar than it does sugar.
