This Vegan Nacho Cheese Recipe Is Everything

Nacho cheese and chips is a fan favorite among people from coast to coast, but it is riddled with saturated fat and animal products – a big no no for vegans. If you’ve given up cheese and other dairy products and miss that cheesy consistency in your food, you are in luck! There are many ways to create plant-based cheese alternative recipes – including nacho cheese – that are delicious and easy to make.

Here is a delicious and easy Vegan Nacho Cheese recipe to satisfy your need for cheese:
 
This dish takes less than 30 minutes to make and is super easy to prepare.
 
Ingredients:

  • 1 medium potato
  • 1 small onion
  • 1 red bell pepper
  • 3 tbsp nutritional yeast
  • 1/2 cup soy milk (or nut milk of choice)
  • 1/4 cup beans of choice (chickpeas, pinto, cannellini or black beans)
  • Corn chips (for dipping)

 
Tools Needed:

  • Vegetable steamer
  • Large pot
  • Blender or food processor
  • Knife or vegetable peeler

Yield: 1 cup and serves 2-3 people
 
Vegan-Nacho-Cheese
 

Step 1: Cook

Boil water in a large pot. While the water is boiling, wash the pepper and peel the potato. Dice the pepper and onion into equal pieces so they cook at approximately the same rate.
 
Pro Tip: When choosing your potato, do not discard the spotty or sprouted spuds. There is a big misconception that sprouted potatoes must be tossed or thrown away. This couldn’t be farther from the truth! There is absolutely nothing wrong about using these guys as long as you make sure to cut out the bruised parts and peel away the sprouted skin.
 
Once the water has boiled, place the potato, onion and pepper in a vegetable steamer and place it over the boiling water. Place a lid on top of the pot to trap moisture and allow your veggies to cook faster.
 
Steaming vegetables usually takes about 10-15 minutes. You’ll know your vegetables are done cooking when they become tender and you can easily pierce a fork through the potatoes.
 
 

Step 2: Blend

Next, blend your cooked vegetables with your vegan milk of choice and nutritional yeast. If your mixture is too thick, add a bit more milk to thin it out.
 
 

Step 3: Enjoy

When you’ve reached your desired consistency, pour your nacho cheez sauce into a small bowl and serve with corn chips and beans.
