Have you heard of the latest healthy food trend? It involves cooking veggies (always a good thing!) with a veggie spiralizer. Haven’t heard of a veggie spiralizer? I hadn’t either, and now I’m completely hooked!
 
I too used to be like you, attempting to slice small veggie strands for years, and never being satisfied with the slenderness of the strand. I finally decided to buy a spiralizer on Amazon.com. Why, oh why, didn’t I do this sooner?! When it comes to cooking healthy, the veggie spiralizer is truly life-changing!
 
The veggie sprializer is a small, hand-held contraption with no assembly required that can be used on virtually any firm vegetable (or fruit). Zucchini, squash, cucumbers, carrots, potatoes. Create a grain-free pasta, veggie noodle soup, or a no-noodle pad thai!

Veggie spiralizers have become so popular because they enable you to make wholesome, delicious recipes, similar to your favorite not-so-healthy recipes in a few quick and easy steps. These recipes are ideal for busy yogis who don’t always have time to cook an extravagant meal, but don’t want to sacrifice eating healthy. Any recipe that can be created with noodles can be re-vamped with your favorite spiralized vegetable. Replace 2 cups of pasta (200 calories, 41 carbs, 3 grams fiber), with 2 cups of vegetables (wholesome calories, wholesome carbs).
 

Satisfy your warm and hearty fall meal cravings with these 3 nutritious veggie spiralizer recipes

 

1. No-Noodle Veggie Lo Mein

A simple, healthy Lo Mein packed with nutrients and color!

• 2 medium zucchini, spiralized
• 1 tbsp. sesame oil
• ¼ red onion, diced
• 1 clove garlic
• 1 tsp. fresh minced ginger
• Handful of carrot shreds
• Handful of chopped broccoli
• ¼ cup edamame
• 2 dashes of tamari (or soy sauce)
• Handful of peanuts (optional)

Heat 1-tablespoon sesame oil in wok or skillet with onion, garlic, and ginger. Add carrots, broccoli, and edamame and cook until softened. Stir in the spiralized zucchini and heat until zucchini is slightly softened. Sprinkle with peanuts or sesame seeds. For an extra dose of protein, add seared tofu or chicken breast. Enjoy your quick and healthy dish!
 

2. Zoodle Pasta

A simple, healthy twist on a beloved classic!

• 2 medium zucchini, spiralized
• ¼ red onion, chopped
• 1 glove minced garlic
• 1 tbsp. fresh chopped basil
• 1 tsp. olive oil
• ½ c. your favorite marinara sauce
• 1 tbsp. Parmesan cheez (equal parts walnut and nutritional yeast with a pinch of salt)

Prepare the vegetable noodles using a spiralizer or julienne peeler and transfer to a large serving bowl. Sauté onion and garlic in olive oil until browned. Add spiralized zucchini and your favorite marinara sauce. Sprinkle with cheez and fresh herbs, serve, and enjoy.

 

 

3. Sweet Potato Fries

All the flavor, without the guilt!

• 2 small sweet potatoes, spiralized
• 2 tbsp. olive oil
• ½ tsp. sea salt
• Fresh chopped herbs (optional)

Preheat oven to 325 degrees.

Place spiralized sweet potatoes in a large serving bowl and stir in olive oil.

Line a baking sheet with parchment paper and spread the sweet potato mixture evenly. Sprinkle salt over entire baking sheet.

Bake for 10 minutes, remove from oven and flip, and then bake 10-15 more minutes until crispy. Delicious and nutritious!
